- 3–4 fresh peaches
- ½ cup brown sugar
- 4 tablespoons unsalted butter
- 1½ cups all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup Greek yogurt
- 1 teaspoon vanilla extract
- ¼ cup milk
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
Prepare the Peaches: Wash the peaches and slice them into thin, even pieces.
Make the Caramel Layer: Melt the butter in a saucepan over medium heat. Add the brown sugar and stir until smooth.
Add the Peaches: Pour the brown sugar mixture into the cake pan. Arrange the peach slices evenly over the top.
Mix the Dry Ingredients: In a bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
Mix the Wet Ingredients: In another bowl, beat the softened butter and granulated sugar until creamy. Add the eggs one at a time and mix well.
Add Yogurt and Vanilla: Add the Greek yogurt, vanilla extract, and milk. Mix until smooth.
Make the Batter: Slowly add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix.
Add the Batter: Pour the batter over the peaches and spread it evenly with a spatula.

Flip the Cake: Place a serving plate over the pan and carefully flip the cake. Slowly remove the pan and parchment paper.
